Quick and Healthy Mexican Dish:

Spicy Beef Tortillas With Oven baked Sweet Potato Fries And Tomato Salsa

Ingredients (serves 2)

For the Tortilla’s

  • 12 oz. grass-fed organic beef/steak

  • 2 cloves of garlic, minced

  • 1 small onion, finely chopped

  • ½ teaspoon smoked paprika

  • ½ teaspoon cumin

  • ¼ teaspoon chili powder

  • a good pinch of sea salt and pepper

  • 1 tablespoons coconut oil or olive oil

  • 4-6 corn or flour tortillas or hard shell tacos (depending on the size)

For The Sweet Potato Fries

  • 2 medium size sweet potatoes

  • ½ teaspoon chili powder

  • ½ teaspoon smoked paprika

  • ¼ teaspoon oregano

  • ¼ teaspoon cumin

  • ¼-⅛ teaspoon cayenne pepper

  • Sea salt and pepper, to taste

  • 2 tablespoon olive oil

For The Salsa

  • 2 large tomatoes, diced

  • ½ medium red onion, chopped

  • ½ chili pepper or jalapeño, minced (seeded if desired)

  • ½ bunch parsley, chopped

  • 1 garlic clove, minced

  • ½ lime, juiced

  • 1 tablespoons olive oil

  • sea salt and pepper to taste

For the topping

  • 1 large avocado

  • Queso fresco or cajita cheese

Directions
  • Start with the fries, cut the sweet potatoes into ½ inch thick matchsticks. Place them in a large bowl and drizzle with oil, chipotle Chile powder, oregano, smoked paprika, cayenne, cumin, sea salt and pepper. Toss to coat. Preheat the oven to 425°F and bake the fries on a baking sheet for 15-20 minutes, flip the fries, and bake for another 15-20 minutes.

  • Tomato Salsa: combine all ingredients, season with salt and pepper.

  • Topping: mash the avocado with lemon juice and a pinch of sea salt and pepper

  • The meat: Cut the steak in thin strips. Heat a large skillet over high heat and cook the onion until tender. Add the beef, garlic, smoked paprika, cumin, chili powder, sea salt, and pepper. Cook for a few minutes, make sure the meat is still tender and juicy.

Spread the beef in the middle of a warmed tortilla or hard shell taco. Top with the tomato salsa, avocado, queso fresco, and sweet potato fries. Enjoy your meal.
